Meatless Monday

The eggplant recipe reminds me of an eggplant lasagna I used to make. You can use your favorite lasagna recipe and just substitute lightly sauteed eggplant slices for the noodles.

I don't remember dredging the eggplant with flour first, but I don't suppose it would hurt to do it. It is important to brown the eggplant first or it turns to mush in the oven.

Don, we like eggplant instead of meat in various dishes. Since going vegetarian, we go with eggplant parmagiana instead chicken or veal, and use it in a number of pasta dishes, including several spaghetti sauces. We'll have to try it in lasagne. I'm sure it would be good!

having this kind of dishes everyday would definitely makes you more healthy and less gain weight. Balance diet with proper exercise would make your body into great shape..
