Meatless Monday

Running Green supports Meatless Monday, an initiative associated with the Johns Hopkins Bloomberg School of Public Health. The goal of Meatless Monday is to help reduce meat consumption in order to improve public health and the health of the planet.

I prefer simpler recipes with more readily available ingredients. This week, I made an old summer favorite: sliced tomatoes, cucumbers, and onions in vinegar and oil.

You can use a bottled dressing (I used a Kraft red wine vinaigrette) or make your own and add whatever herbs and spices you prefer. I like garlic pepper and basil. Refrigerate for at least 2 hours before serving.

There's never anything wrong with simple! Many fresh, simple recipes are among the best!
