Meatless Monday
Running Green supports Meatless Monday, an initiative associated with the Johns Hopkins Bloomberg School of Public Health. The goal of Meatless Monday is to help reduce meat consumption in order to improve public health and the health of the planet.

Someone isn't paying attention to the links on this site. The mushroom pie which was missing from last week's post has shown up this week instead of the mushroom strata they featured. However, if you click on the "Favorite Recipes" link on the side and then click "All," the strata recipe shows up for this week's selection.
I made what I call "instant" bean soup. Instead of sautéing the vegetables, I put them in a covered dish with a bit of water or stock and microwave them for 3 minutes. Then, I put them in a pot with a box of stock, a can or two of navy beans, and the seasonings. Simmer the soup for about 15 minutes or until a fork easily pierces the carrots.
