Meatless Monday
Running Green supports Meatless Monday, an initiative associated with the Johns Hopkins Bloomberg School of Public Health. The goal of Meatless Monday is to help reduce meat consumption in order to improve public health and the health of the planet.

The lentils sound good...but not for breakfast. I had mashed sweet potatoes about a week ago. I wouldn't recommend adding maple syrup to them as they're sweet enough already.
I don't know where the authors of these recipes live, but they use too many ingredients that aren't available here. In the squash recipe alone, I can't get red quinoa, miso paste, persimmons, or chipotle chili powder, and I seldom see Swiss chard or fresh sage in the stores.
