Meatless Monday
Running Green supports Meatless Monday, an initiative associated with the Johns Hopkins Bloomberg School of Public Health. The goal of Meatless Monday is to help reduce meat consumption in order to improve public health and the health of the planet.

I had a Lima Bean sandwich yesterday. I don't do anything fancy like this recipe does with split peas. I just cooked them in stock with a bit of onion and put them between slices of buttered bread.
When we were kids, we used to make sandwiches out of baked beans too. They were more like the sloppy sandwiches in the recipe with their thick tomato based sauce.
Don, I've seen several recipes recently for vegetarian versions of the classic "sloppy joe" using some type of bean instead of meat. I want to try it!
