Meatless Monday
Running Green supports Meatless Monday, an initiative associated with the Johns Hopkins Bloomberg School of Public Health. The goal of Meatless Monday is to help reduce meat consumption in order to improve public health and the health of the planet.

I'm making vegetable soup, but I haven't decided if I want rice or noodles in it.
Saturday, I made baked apple slices in the microwave. Just peel, core, and slice 2 apples per person, toss with melted butter, and sprinkle with brown sugar and cinnamon. Microwave on high for 4-7 minutes.
You can't go wrong with any of the varaiations on homemade vegetable soup, Don! And you made me hungry for baked apple! Haven't had in a while! Good stuff!
I had a meatless Monday! Gosh that polenta looks fab, I am going to have and try it, thanks Vern!
Thanks for posting these recipes Vern. They give me ideas for new things to try.
