We substitute vegetable broth in numerous recipes-- works great! The baked ratatouille, on the other hand, sounds delicious.<br /><br />The vegetable soup is very similar to a Pasta Fagioli I made last week. See the recipe here:<br /><br />http://allrecipes.com//Recipe/pasta-fagioli/Detail.aspx<br /><br />Just substitute vegetable broth for the chicken broth for a vegetarian version. I thought the celery needed more cooking time as it was too crunchy for soup, and I don't recommend using tomato sauce as it makes it too thick.
